You guys, I’ve been cooking.
Since spending the weekend in Connecticut with Weight Watcher extraordinaire, Cara, I’ve been trying my hand at some of her new recipes. They’re so simple I feel I have to share. For me, they have to be simple… remember last Thanksgiving when the flames shot out of my oven?
Rachel’s version of Cara’s Blueberry “Cobbler”
Preheat your oven to 350
Ok, get a little pan. Fill the bottom with a layer of blueberries (oh and I’m totally going to try this with other fruits too). Sprinkle on top of it a layer of oatmeal. Add a cup of water. Optional: add sweetener, flax seed meal, more dry oatmeal.
Pop it in the oven for I forget how long… it’s edible at any point though.
In a 9x9 pan, 1/4 of the cobbler is 1 point. That’s crazy, right! It’ll be more if you add sugar, flax, or more oatmeal. Still.
